Cream candy is an old fashioned candy center also known as Opera Cream or Fondant Creams. This candy’s ingredients are cooked in a pot and poured out onto a cold slab.
Once cooled we add in marshmallow cream, flavors, roasted nuts or dried fruits. This caramel looking mixture is whipped until it looses its gloss, thickens and transforms into a creamy cookie dough consistency.
We then roll the cream candy into balls and dip them into pure tempered chocolate.
